This evening we had the great opportunity to take part in Food For Thought Initiative‘s Skip Sugar Day! We enjoyed being a part of the farmer’s market.

As I promised to those of you who loved the pulled chicken at the farmer’s market, here is the recipe. We still have a limited quantity of pastured chicken available, so order yours now! Remember you can pickup at the farm Mondays 12-8 or by appointment, plus we also do a dropoff in Leesburg every Tuesday!
Independence Homestead Pulled Chicken
Ingredients
- Independence Homestead Chicken
- 1 14.5 oz can diced tomatoes
- 1 white onion, diced
- 4 cloves of garlic, diced
- 1 6 ounce can of tomato paste
- 2 tbsp dijon mustard
- 2 tbsp apple cider vinegar
- 1 tbsp extra virgin olive oil
- 2 tbsp paprika
- 1 tsp sea salt
- 1 tsp cayenne
- 8 oz of canned diced pineapple
- 2 dashes liquid smoke
Instructions
- Roast chicken at 350 degrees for 20 minutes per pound. Check doneness with a meat thermometer, which should read 165 degrees. Let the chicken rest for 15 minutes.
- Combine all other ingredients above in a food processor or blender. Blend until smooth.
- Remove meat from skin and bones; “pull” chicken with a fork.
- Combine chicken and sauce in slow cooker. Stir well. Cook on low for 4.5-6 hours.
