The cold weather has not slowed us down at Independence Homestead. We’ve been busy enjoying the fall harvest and taking advantage of the time indoors to make some delicious treats!
We visited a local orchard to pickup some apples recently, then spent several days transforming them into apple chips, applesauce, and apple butter. The applesauce and apple butter were made with no added sugar, just honey from our bees!
The applesauce and apple butter turned out great; we’ve been enjoying apple butter on our toasted homemade bread nearly every morning. These beautifully canned jars make great gifts for the holiday festivities and the apple chips are a healthy, delicious, snack for anytime!

Other exciting developments on the farm include the kindling of our first rabbit litters. Two of our Silver Fox rabbit does gave birth in November. The babies are growing quickly and will be weaned from their mothers in a few weeks.
If you are interested in raising your own rabbits, we highly recommend this heritage breed and would be happy to spend time talking to you about Silver Fox rabbits. The first rabbits will be available in about three weeks for you to take home to add to or start your own rabbitry, but you can reserve yours now to be sure you get first pick of the litter! If you have family in town or are hosting a meal with friends this holiday season, why not serve a high quality, organic chicken from your local neighborhood farmers? Each chicken serves many, and is easy to prepare: brush on some oil and seasonings then throw it in the oven! Leftovers make for delicious additions to salad and are great in sandwiches! Not to mention you can feel good about serving healthy meat from livestock that lived healthy, respectful lives.
