Are you familiar with the Slow Food movement? It was started in the 1980s as a reaction to the opening of a McDonald’s in Rome. People had enough of “fast food” that comes at the expense of health, taste, and culture. Now, Slow Food is an international organization whose mission is “good, clean and fair food for all”. Slow Food’ maintains an Ark of Taste to highlight foods in need of preservation. Inclusion in the Ark of Taste is the ultimate recognition for a heritage livestock breed. One of the key requirements is that the food must be tasty!
Our meat rabbit breed, Silver Fox, is included in the Ark of Taste, where it is noted that “the taste of its meat is of high quality with a fine texture and taste.” We will be breeding our rabbits in the next month, and expect to have rabbit meat for sale around the end of January. Our hog breed, American Guinea Hog, is also featured! It’ll be over a year before we get out first pork from our own hogs, but it’ll be worth the wait.
