Today I stumbled upon this article, which summarizes the results of numerous studies highlighting the health benefits of eating eggs. The author highlights how egg consumption has not been shown to increase cholesterol in most people, and how no research shows egg consumption links to heart disease. In fact, eggs contain many wonderful nutrients: B vitamins, vitamin A, vitamin E, iodine, phosphorus, and antioxidants.
My favorite part is when the author notes “it’s important, however, to make sure that you buy organic, pasture-raised eggs. Studies show that commercially-raised eggs are up to 19 times higher in pro-inflammatory omega-6 fatty acids.”

What I really love about these articles is the author’s citations to the studies that prove his point.
